Items in the Shop


Have you checked out the Etsy Shop yet?? If not, you should definitely browse around! I know there isn't much on there yet, but just wait! This weekend I made another wallet for the shop, came up with a new item, and made the first prototype! I like to have my items tested out before I put them in the shop to make sure they are up to snuff.. My mom and sister are the lucky guinea pigs (and of course yours truly :])! So be sure to check back in a couple of weeks to see the BIG reveal!

Just like Auntie Anne's Soft Pretzels

My boyfriend LOVES Auntie Anne's soft pretzels. Whenever we go to the mall he always has to stop and get at least one. He requested I learn how to make them. So after browsing the Internet for a good recipe, and doing some fine tuning of my own, I have come up with the perfect home made pretzel recipe!

This recipe makes about 12 pretzels and is ready in about 1 1/2 hours. 

Ingredients:

-1 1/2 cups warm water
-1 1/8 teaspoons active dry yeast
-3 tablespoons brown sugar
-1 1/8 teaspoons salt
-1 cup bread flour
-3 cups all-purpose flour
-2 cups warm water
-2 tablespoons baking soda
-Course salt to taste
-4 tablespoons melted butter

 Directions:

1. In a mixing bowl add 1 1/2 cups warm water, stir in yeast to dissolve. 

2. Add in brown sugar and salt. Stir to dissolve. 

3. Add in the bread and all-purpose flour. On a floured surface, knead the dough until smooth.

4. Place dough in a large bowl, cover with plastic wrap (or a damp cloth) and let the dough rise for at least 30 minutes. 

5. While the dough is rising, prepare a baking soda water bath. Dissolve 2 tablespoons of baking soda in 2 cups of warm water. Stir often. 

6. After dough has risen, pinch off bits of dough and roll into long sticks. I just leave mine as sticks, it is easier and takes less time to shape. :)

7. Dip the formed pretzels in the baking soda solution. Place on greased baking sheet.

8. Recover the pretzels with plastic wrap (or a damp cloth) and let them rise for another 30 minutes. 

9. Preheat oven to 450 degrees. 

10. Cook pretzels for about 8 minutes or until golden brown. 

11. To finish, brush cooked pretzels with melted butter and sprinkle with course salt. I sometimes sprinkle cinnamon sugar on top for a yummy treat! 

If you have leftover pretzels store them in an airtight container or plastic bag! We leave ours on the counter, we find putting them in the fridge makes them a little soggy. 

I hope you enjoy this recipe as much as we do! They make a great afternoon snack, and would be really fun to make with little kids! Next time I make them, I will post a picture so you can see the finished results! :)

Calzone Recipe

Last Sunday we made the YUMMIEST calzones for dinner! I got all of the recipes from the "How to Cook Everything" cookbook (everyone should get this cookbook, by the way). I did change up some parts of the recipes, so that is what I will be sharing with you today. :)

Do not let all the steps and instructions intimidate you! This is a really easy recipe to make and is SUPER yummy!! You should make it at least once in your lifetime! :)

Basic Pizza Dough 

-1 teaspoon instant or rapid-rise yeast
-3 cups bread flour (you can also use all-purpose flour)
-2 teaspoons coarse kosher salt
-1 to 1 1/4 cup water
-2 tablespoons plus 1 teaspoon olive oil

1. Combine the yeast, flour, and 2 teaspoons of salt in a large bowl (I used my Kitchen Aid with the dough hook). Begin mixing, add 1 cup of water and 2 tablespoons of olive oil.

2. Gradually add more water until dough forms into a ball and is slightly sticky to the touch. If your dough become too sticky, add a small amount of flour at a time.

3. On a floured work surface, knead the dough by hand to form a smooth, round dough ball. Grease a large bowl with the remaining olive oil, and place the dough inside.

4. Cover with plastic wrap (or damp cloth) and let the dough rise for 1 to 2 hours.

**You can make this dough ahead of time and store it if the freezer for up to one month.**

While the dough is rising I make the pesto and get everything else ready to put inside the calzones.

Basic Pesto

-2 loosely packed cups fresh basil leaves (make sure they are rinsed and dried)
-2 tablespoons minced garlic (we LOVE garlic)
-1/2 cup extra-virgin olive oil (or more depending on how you thin you like it)
-1/2 cup Parmesan cheese

1. Combine the basil, garlic, and about half of the oil in a blender. Process, make sure you scrape down the sides occasionally.

2. Gradually add the rest of the oil and add the cheese.

3. Store in the refrigerator until you are ready to use.

**The recipe says to stir in the cheese by hand right before serving, I just do it all at once. You can store pesto in the fridge for up to two weeks, and in the freezer for several months.**

Calzone

The beautiful thing about calzones is you can put whatever you want inside! It is a great way to get rid of various leftover veggies sitting in your fridge, or even leftover meat! I like to use leftover chicken. Here is what I put inside our calzones!
-2 large chicken breasts (cut up into bite sized pieces)
-Mozzarella cheese
-Cheddar cheese
-Parmesan cheese
-Green peppers
-Artichoke hearts
-Sliced olives
-Pepperoncinis
-Red onion
-Extra garlic (I told you we loved garlic :])
-And of course the homemade pesto!

1. Once the dough is ready, knead it lightly, divide in half, and form into 2 balls. Place on a lightly floured surface, cover with plastic wrap, and let rise for 20 minutes.

2. Preheat oven to 350 degrees Fahrenheit.

3. Roll each dough ball into a flat round. Let the rounds sit for a few minutes, this will relax the dough and make it easier to roll out!

4. Roll the dough into an 8 to 10 inch round (like a pizza!) and place on a lightly oiled baking sheet.

5. Cover each form with the pesto. Fill with chicken, veggies, cheese, and whatever else your heart desires!

6. Moisten the edges with a little water. Fold one end over the other and press the calzone closed with your fingertips.

7. Bake the calzones for 30 to 40 minutes, or until nicely browned. Serve hot or warm!

After cooking. They are HUGE! And so tasty! 

Each calzone will be enough for 2 (yes 2!) servings. It pairs great with salad! I love it with Caesar salad. This is really fun to make for a small dinner party. It would also be a fun way to get kids involved with making dinner! Let me know how your calzones turn out! :)

Homemade Light Box

Recently, I have been working really hard to get a small inventory of sewing projects and crafts together to start an Etsy shop. I went to take some pictures of my products last weekend and they did not look good at all. :( I wanted the background to be white (it seems peoples products look better against white, and overall makes the look more professional). So I ran to my best friend.... Google! After some time, and various different searches, I stumbled on "The Light Box".

There are many different tutorials out there. I decided to try out a design made with foam board because it had better reviews. It was not only really inexpensive to make, but also easy! Oh and did I mention it only took me 20 minutes to make? :)

What you will need:



-5 sheets of White Foam Board 20" x 30" (I got mine at Office Depot for about $4.35 a piece)
-Packing Tape
-Paper (to cover the bottom edge so there is no "horizon" in your photos)
-100 watt Daylight Bulbs (I got a 4 pack at Lowe's for $8.78)
-2 or 4 Lamps (I am using 2 we bought from Target for $4.28 each)
-Razor Knife ($3.99 at Office Depot)
-Straight Edge
-Pencil

1. First you will want to attach the top to the back. Simply line up the two pieces of foam board, and tape them together. 


2. Attach another foam board to create the bottom. 

Thomas is obsessed with boxes! :) I had to protect the foam from being squished while I was taking a quick picture!

3. Attach the sides and cut off the extra foam board.

4. Once your box is assembled, add a strip of paper (you could even use white tape) so there is a seamless transition between the two pieces of foam board. I used tissue paper because it matched the color of my box the best.



5. Almost done! This part is optional, but I recommend it if you want to take a top view photo. Simply cut out a hole at the top of the box. Make sure to only cut three sides, and score the last. This will be the fold so you can open and close the top. 


6. And there you go! You now have your very own light box!


These were the closest things to me while I set up the lights. I know it is a lame "model" and needs some editing, but not too shabby quality!


I have decided I want to get two more lamps to use. The brighter the white, the better (in my opinion)! Have a wonderful weekend everyone! Thanks for stopping by! :)
